Cauliflower with White Sauce

| Time: 35-40min Servings: 4-6 Ingredients: 1 medium cauliflower or romanesco 1 tsp salt 1/4 tsp nutmeg 1,5-2 litre (4 cups) water (enough to cover the cauliflower) 4 + 2 tbsp vegan butter or margarine 4 heaping tbsp flour 1 cup gluten-free breadcrumbs 1 tsp lupine sauce (or soy sauce if you can have soy) Instructions: 1. Cut the cauliflower into individual florets and cook in 1,5-2 litre of water with salt and nutmeg. 2. Once the cauliflower is tender (or to your desired texture), drain it through a sieve, saving the cooking water for the sauce. Set the cauliflower aside. 3. In the meantime, toast the breadcrumbs in a pan over medium heat with the remaining 2 tbsp of vegan butter, stirring constantly until they start to brown. Add the lupine sauce and keep stirring to avoid burning the breadcrumbs. 4. In the same pot you used for cooking the cauliflower, melt 4 tbsp of vegan butter. Add the flour and whisk well, allowing the mixture to turn golden. 5. Reduce the heat and gradually add the saved cooking water, whisking continuously to prevent lumps from forming. 6. Taste the sauce and adjust with salt or nutmeg if needed. Then add the cauliflower to the sauce. 7. Serve the cauliflower with potatoes and crispy breadcrumbs. Optionally, you can serve additional tofu, seitan, or tempeh as a side.
